Carrot cake porridge recipe

Carrot cake porridge is my favourite pre-race breakfast. It tastes delicious and gives me plenty of energy, so I thought I’d share my recipe with you:

  • 30g porridge oats
  • 1 finely grated carrot
  • 1 coarsely grated apple
  • lots of cinnamon
  • pinch of nutmeg
  • pinch of ground ginger
  • 10g ground almonds
  • 15g walnuts
  • 10g sultanas or raisins
  • vanilla extract
  • agave nectar
  • water

Method

Mix together the dry ingredients and then add enough water to cover them fully. Microwave for 2 minutes.

This doesn’t look good, but it tastes amazing. My other favourite porridge recipes are apple, cinnamon and sultana; chocolate brownie porridge and banana and ginger.
